In the breakfast world, not many things measure up to the ordinary, yet versatile waffle. Today we are making my family’s favorite version of waffles: Healthy Blueberry Lemon Waffles.

These waffles are made with 100% freshly milled whole wheat flour and our wild foraged blueberries from the Alaskan tundra. Paired with the juice from a zesty lemon, the flavor of these waffles is amazing!
Here is what you’ll need:
- Whole wheat flour
- Lemon
- Blueberries: fresh or frozen.
- Baking powder
- Salt
- Honey
- Eggs
- Milk
- Butter: salted or unsalted
- Birch Syrup or Maple Syrup
- Waffle Iron

The first step is to preheat your waffle iron. Next you will add all the dry ingredients together in a bowl, along with the lemon zest (if you are using it), and mix well. Then add the eggs, honey, milk, and lemon juice and mix into the dry ingredients. Next you will fold your blueberries into the batter. The batter should be thicker so it does not spread out too fast on the waffle iron. If it is too thin just add some flour a little bit at a time to thicken it up. Add about ¼ cup of batter to your waffle iron and cook according to the manufacturer’s directions.

The topping choices are endless, though we love butter and birch syrup. And personally, I like to top them with an over easy egg too. The combination is so tasty!!!

3 cups Whole Wheat Flour
1 1/2 TBS Baking Powder
3/4 tsp Salt
1-2 tsp Lemon Zest (optional)
4 1/2 TBS Honey

3 cups Milk
1-2 TBS Lemon Juice
1 1/2 cups Blueberries
Butter (for topping)
Syrup (for topping)
Directions
- Preheat waffle iron.
- Combine flour, baking powder, salt, and lemon zest (if using) in a bowl.
- Add eggs, honey, lemon juice, and milk and mix well.
- Fold blueberries into batter.
- Scoop 1/4 cup of batter onto waffle iron and cook according to manufacturer’s directions.
- Top with butter and syrup. Enjoy!
Notes
- Substitutions: all purpose flour (start with 2 cups of milk and add a little at a time until you get the consistency you need; any kind of sweetener you like; any kind of milk or non-dairy milk or water.
